Hai teman-teman :) selamat membaca yaa, semoga kita senantiasa menjadi hamba Allah yang selalu bersyukur..


Oke guys senang berjumpa lagi di semester baru ini, sungguh waktu tidak terasa sekarang saya sudah semester 3 rasanya baru bulan kemarin saya memakai baju putih hitam itu.

Hari ini Senin, 29 Juli 2019. 
Saya berangkat ke kampus kurang lebih pukul 06.40. Sekitar kurang lebih pukul 08.00 kami oneline untuk mengumpulkan tugas yang diberikan oleh pak ical hari jumat kemarin, tetapi kebanyakan dari kami mengerjakannya dengan tidak benar jadi kami disuruh keluar untuk memperbaikinya. 

Setelah memperbaikinya kamipun kembali ke kitchen, tetapi yang baru bisa masuk ke kitchen hanya kelompok saya dan kelompok arni, setelah itu kami oneline ulang dan di bagi kembali menjadi 4 kelompok untuk prepare menu buffet. Kelompok saya terdiri dari Ernika, Idong, Bobi, dan saya. Kelompok saya bertugas meprepare soup untuk celebes buffet besok, yaitu Sop saudara dan Sayur labu santan.


'Recipe'

Sayur Labu Santan

Quantity - Ingredients :

1 pcs - pumpkin
1 bunch - long bean
3 pcs - bay leaf
as needed - salt
as needed - sugar
as needed - white pepper powder
3 ml - frying oil
2 stalks - lemon grass
as needed - lemon basil
3 ltr - chicken stock or water
250 ml - coconut milk

Spice paste:
7 gr - galangal
3 pcs - red chilli
10 gr - shallot
5 gr - garlic
5 gr - candle nut

Procedure:

1. peel and cut pumpkin into dice
2. bled all ingredients for spice paste, and saute with oil until fragrant
3. simmer water or chicken stock until boil and put pumpkin and simmer until soft
4. add spice paste, lemongrass, bay leaf, and long bean 
5. seasoning with salt, sugar, and lemon basil
6. add coconut milk and simmer until cooked
7. sayur labu santan ready to serve


'Recipe'

Sop Saudara


Quantity - Ingredients:

1 kg - beef shoulder or brisket
250 g - fried beef lung
4-5 ltr - beef stock
5 - kafir lime leaves
10 cm - cinnamon stick
150 ml - evaporated milk
3 tbsp - vegetable or coconut oil

Garnish:
2 tbsp - fried shallots
100  gr - glass noodles

Spice paste:
2 tbsp - cocont oil
60 gr - shallots
30 gr - garlic
30 gr - galangal
30 gr - ginger
100 gr - large ed chilles
20 gr - candle nuts
1/2 tbsp - shrimp paste
1 tbsp - coriander seeds 
1 tbsp - cumin seeds
1/2 tsp - nutmeg
1/2 tsp - black pepper
2 stalks - lemongrass
2 - salam leaves
30 gr - tamarind
1/2 tsp - salt
3tbsp - vegetable or coconut oil


Procedure:

1. To make the spice paste, combine all ingredients except lemongrass, salam leaves and tamarind in stone mortar or food processor and grind into a very fine paste. plce ground ingredients into a pressure cooker, add remaining ingredients except tamarind juice and saute over medium heat until spices are fragrant
2. fill the cooker with beef stock and bring to boil. add kaffir lime leaves, cinnamon stick and strained tamarind juice.
3. heat 3 ablespoon of oil in frying pan and quickly brown the beefshoulder evenly on each side. this will add a meatier flavor to the broth.
4. place meat into beef soup, bring back to boil, and skim of scum.
5. pressure cook at a gauge pressure of 1 bar/15pcs for 75 minutes. star timing when full pressure is reached. let the cooker cool for 30 minuts.
6. remove cover, take out meat and into small bite size pieces and warm in beef soup before serving.
7. add evaporated milk to beef soup and simmer over low heat for 10 minutes. season to taste with salt and a generous squeeze of lime juice. garnish soup with glass noodles, potato patties, fried shallot, sliced spring onion and fried beeg lung.
8. serve with rice cakes or steamed rice and spicy tomato sauce.


Yang pertama kami lakukan untuk prepare yaitu, membuat chicken stock, memotong pumpkin, longbean dan membuat spice paste sop saudara dan spice paste sayur labu santan. Setelah brisket dan beef lung selesai di thowing, kamipum memotongnya lalu beef lung kami blanch sampai warnanya berubah jadi pucat.

Setelah semua preparean telah selesai kamipun mewrap semua bahan preparean hari ini dan menyimpannya di chiller. Setelah anak bangsa kamipun general cleaning dan pulang ke rumah masing-masing dengan selamat.
